Empire syrups was founded to demonstrate alternative crops that could generate income in a sustainable fashion. The two founders, Carl Batt and Lou Hom are committed to bringing the production of sorghum syrup back to New York honoring the tradition but lowering the impact on the land.
Traditional syrup production has been passed along for generations. At Empire Syrups, we are taking a page from our science notebooks to improve the process and the product. We are also moving away from tillage based methods in favor of no-till. While sorghum can grow in marginal soil we are looking to improve the soil quality and leave it healthier than when we started.
Success at Empire Syrups will require new uses for sorghum syrup. We are partnering with others with whom we will develop unique products. Blue Hill at Stone Barns is working with us to explore different sweet sorghum varieties. We are also working with Rev Spirits who are making a splendid 'rum' like product.
